Award for our sustainable cuisine

ETSM2030

We are proud to have received the recognition for “outstanding co-creation and co-implementation of a Sustainable Innovation Project” as part of ETSM2030.

For more than a year, we have taken part in ETSM2030, a European programme focused on promoting sustainable tourism development. Together with our partner Eliksir restaurant and Paweł Wątor from Poland, we developed the SIP “Evening events with local producers”, a project that highlights producers, their methods and their stories – showing how closely contemporary gastronomy is linked to sustainable agriculture.

For our event, Chef Stephan Zippl expressed the essence of Restaurant 1908: fine dining begins in the fields. Producer Harald Gasser of Aspingerhof presented his rare varieties and the traditional cultivation methods behind them. The menu, created entirely from his produce, told a story in every dish about how origin, craftsmanship and conscious culinary choices intertwine.

This strong connection between producer and kitchen lies at the very core of 1908 – and it is exactly what the award recognises.
